it hit me a few days ago that we are getting towards the end of the summer (gasp!) and i have yet to say a single thing about watermelon. how could i let the summer go by without paying homage to everyone’s favorite melon?! well… here’s making up for lost time. watermelon is one of those foods that i think everyone agrees tastes like summer and childhood. there is just something about that cool, fresh flavor that makes you want to sit on a picnic blanket and dream about what you wanna be when you grow up. and then have a seed spitting contest.

it seems almost sacrilegious to put watermelon into a recipe that involves it being eaten any way other than plain, in its truest form, adorned with nothing but its own cool, juicy freshness. but i think that by now, the watermelon feta salad has actually become a somewhat mainstream way of eating watermelon, so i think it’s allowed to be recipe-i-fied in this case. this salad has all of that watermelon flavor you know and love, but with the added salty tanginess of feta cheese, which balances out the sweetness just enough to make this dish appropriate for a savory meal.

it’s a perfect combination – and then when you add a punch of balsamic vinegar and some cooling mint, you are left with an outstanding summery flavor explosion. this salad without a doubt deserves a spot at every summer event.
